Pollo della Nonna – chicken with red wine , onions and bay leaves

Ingredients 
4 whole chicken legs cut into drums and thighs
1 large onion
2 bay leaves
2 cups red wine (white wine is fine too)
Salt
Pepper
Optional – aromatic salt
Olive oil

Method

Cut the chicken legs into 2, separating drum and thighs. You can also leave the leg whole if your Dutch pot is large enough.
Salt and pepper the chicken.
Finely slice the onions.
Put a Dutch pot at high heat
Add a generous splash of olive oil
Add the onions and cook them for 3 minutes
Add the chicken and bay leaf and stir well
Add red wine
Cover with lid and turn the heat down to min and cook for 45 minutes. It should simmer after few minutes, adjust the heat accordingly.
Uncover, baste the chicken with the wine juice and cook for extra 15 minutes until the wine is lightly reduced.
